3 2 1 ribs, How To Smoke 3-2-1 Ribs

3-2-1 Ribs
COOK TIME: 7 HOURS, 15 MINUTES.  

2 whole racks of spare ribs or baby back ribs

2 Tablespoons of mustard for a binder - can also use olive oil or BBQ sauce
1 teaspoon black pepper and 1 teaspoon kosher salt (or more to your liking)
Apple juice or ACV for spraying (optional)

Preheat smoker to 225-250 º F.

Prepare your ribs by removing the membrane. This can be done using a butter knife to start and using a paper towel to grip and pull the membrane. Pat ribs dry to remove excess liquid. Apply desired binder in a very thin layer all over ribs. Season with salt and pepper to your liking, starting at the bottom, coating the sides and finishing with the top of the ribs.

Put ribs on preheated smoker. Cook ribs unwrapped for 3 hours, spraying every hour as needed.At the 3 hour mark, remove from grill and wrap in aluminum foil. Wrap tightly.

Place them back on the smoker for 2 hours.

Remove ribs from smoker and carefully peel back the foil. Place ribs back on the smoker, uncovered for the last 1 hour.  Optional: Sauce the ribs with Okie Bo's BAR-B-Q sauce to let it set.

The ribs are done when they are tender and hit a temperature over 195º F.  Remove ribs and let rest (at least 10-15 minutes, ideally for 30 minutes to an hour). Slice evenly and serve!

NOTE: To slice ribs evenly, turn ribs over (bone side up) and slice from the back. Serve your delicious ribs up with additional sauce on the side.
