Okie Bo's BBQ Meatloaf (Classic)

Okie Bo's BBQ Meatloaf
MAKES 6 TO 8 SERVINGS
COOK TIME: 1 HOUR 15 MINUTES
2 Tablespoons olive oil
2 pounds ground beef
1 small onion, finely diced
1/2 teaspoon chili powder
1 egg, well beaten
2 slices white or wheat bread, torn into small pieces (can sub 1 cup old fashioned rolled oats or ¾ cup breadcrumbs)
2 Tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
¾ cup Okie Bo's BBQ Sauce, divided
Preheat oven to 350º F. Lightly grease a 9X5 loaf pan.
In saucepan, add olive oil and onion and sauté until golden brown, about 5 minutes. Drain well. In a large bowl, mix all of the ingredients, including onion and 1/4 cup of BBQ sauce. Mix until just combined — do not overmix. Shape the mixture into a loaf and place in loaf pan or on a rimmed baking sheet. Bake uncovered for 60 minutes.
Spread the remaining 1/2 cup of Okie Bo's BBQ Sauce evenly over the top of the meatloaf and back uncovered for an additional 15 minutes, or until the internal temperature reaches 160º F and meat is no longer pink. Allow to rest for 10 minutes before slicing.
